WE just made our own Baileys!

Inspired by the Scrimpers programme on the telly, we went out and bought a bottle of chocolate topping (the stuff you put on icecream cones) a small 14 oz tin of condensed milk and a tub of double cream (one cup),with a couple of tea spoons of coffee granules, 2 table spoons of chocolate sauce and a teaspoon of vanilla - oh, and a couple of cups of whiskey. Blend it together and bobs your uncle! Its in the fridge now.

In the fridge about three weeks, or so they say. I suppose the alcohol keeps the cream fresh. Its tastes excellent but its a bit thick - in my opinion. I might try half double and half single cream or put a bit of milk in instead. The taste is perfect, though.

Why would one want to drink Bailey's, let alone make your own?

It's a traditional Christmas offering I think but I don't normally have any in the house tbh.

You don't have to make up a litre like wot we did. You could halve the ingredients and make enough for a couple of glasses.

And it is delicious, Simon. Specially with a few ice cubes. And it was only a bottle of supermarket whiskey.

It was the "e", wasn't it. But it is supposed to be Irish. Not that it makes a lot of difference with all those added ingredients.

I'm not really a fan of whisky with or without the e unless it is disguised in some way, like in a hot toddy or with ginger ale or something. I would always buy the Scottish version though, obviously.

Just made it with the MIL and tasted what wouldn't fit in the bottle. She was impressed.
